This recipe came about when we had some spinach left in the house and needed to process it, because throwing it away is not an option.
A look in the pantry brought pasta and tomatoes to light and the recipe was born.

Recipe

Pasta Spinach Casserole
Ingredients
- 250 g pasta
- 125 g organic baby spinach
- 2 to matoes
- 2 onions
- 3-4 cloves of garlic
- 250 g cream (7% fat)
- 100 g cheese for gratinating
- oil
- 1-2 tsp vegetable broth
- 1 tsp pepper
- 1 tsp salt
Instruction
- Cook the pasta in salted water until al dente.
- In the meantime, peel the onions and cut into small cubes.
- Peel the tomatoes and also cut into small cubes. Finely chop the garlic cloves.
- Wash and drain the spinach.
- Preheat the oven to 220°C (fan oven 200°C).
- Put the oil in a pan and sauté the onion.
- When the onions are translucent, add the chopped garlic and the tomato pieces and fry as well.
- Then add the baby spinach and sauté briefly.
- Deglaze with cream.
- Add the vegetable stock, salt and pepper, stir and season to taste.
- Pour the pasta into a baking dish, pour the spinach mixture over it and mix together.
- Sprinkle with the cheese and place in the oven, preheated to 200°C, for 20 minutes.
