In a conversation with my mother, we discussed a zucchini salad that she made for herself. I wrote down the ingredients and tried the salad the next day.

The result: We were very enthusiastic about the taste and the speed and my mother was proud of her successful recipe.

Zucchini is a true all-rounder in the kitchen. It can be prepared in a variety of ways, there are no limits to your imagination. Due to its low calories, it is the ideal vegetable for the summer.
Recipe

Tasty Zucchini Salad
Ingredients
- 250 g zucchini (small and fresh)
- 150 g sour cream
- 2 tbsp remoulade (alternatively mayonnaise)
- 1 apple
- 1 tsp honey
- 2 tbsp chilli mustard (alternatively normal mustard)
- 1 tsp vegetable broth
- ½ tsp salt
- ½ lime
- ½ bunch fresh mint (alternatively parsley)
- 1 tsp pepper
Instruction
- Wash the zucchini and grate coarsely on a kitchen grater.
- Place the zucchini in a colander and let drain.
- Wash, core and grate the apple.
- Wash and chop the mint as well.
- Squeeze the lime.
- In a bowl, place the zucchini, apple, and mint.
- Add the lime juice, honey, mustard, spices, sour cream and tartar sauce and mix well.
- Season the tasty salad to taste, arrange and serve.
Notes
- If you want, you can add meat and/or bread.
- The salad is just as variable as the zucchini. If you don’t like mint, you can replace it with parsley. So you can swap out individual ingredients.
