I would like to introduce you to a healthy stew. The special thing about it is the use of fresh mint and fresh parsley in large quantities.
The main ingredient of the dish is rice.

Rice is one of the oldest and most important crops on earth. Asian rice comes from China, where it was cultivated 10,000 years ago. Today, rice is the staple food for more than half of the world’s population. In Asia, the annual per capita consumption is 90 to 150 kg of rice, while a person in Germany only consumes 5 kg.
In traditional Chinese medicine (TCM), rice grains are not only considered food, but also home remedies. They are used to aid digestion, lower blood pressure, relieve stress on the heart and dehydrate the body.

But now let’s get to the recipe.
Recipe

Vegan Spring Rice Pot
Ingredients
- 180 g rice
- 1 red pepper
- 2 carrots
- 1 onion
- 1 tsp pepper
- 2 tbsp vegetable broth
- 1 bunch of fresh mint
- ½ bunch of fresh parsley
- approx. 2000 ml hot water
- 1 tbsp sweet paprika powder
- Some oil for frying
Instruction
- Cut the peppers, carrots and onion into small cubes.
- Put some oil in a saucepan and sauté the vegetables.
- Then add the rice and fry it as well.
- Scatter over the paprika powder and add the hot water.
- Add the spices and fresh herbs and mix.
- Put the lid on and simmer at medium heat for about 20 minutes, season and serve.
